Best Ever Guacamole
Taco night is without a doubt our favourite family dinner. We enjoy it weekly and a great guacamole is essential! There are four keys to nailing it: ingredients, balance, texture and temperature.
Be sure to use perfectly ripe, room temperature avocados. Serving it this way ensures that you get the most out of the subtle but delicious flavour of the star avo.
A tip I picked up from La Casita, our local Mexican, is to mix it to go. This ensures a perfect, slightly chunky texture and fresh, zingy flavour.
Everyone has their own variations on recipe but for me it’s always ripe avocados, diced tomatoes and red onion, finely chopped coriander, lime juice, salt and pepper. Sometimes I’ll add a little olive oil. Balancing these flavours is important so be sure to taste as you go as every lime has a different amount of juice and no avo is the same!
INGREDIENTS:
2 ripe avocados, diced
1 ripe tomato, diced
1/4 red onion, finely diced
Handful coriander, enough to fill 1/3 cup, finely chopped
Juice of 1/2 lime
2 Tbs olive oil
Salt & pepper
METHOD:
Place all the ingredients in a bowl and mix until combined, mashing at times to incorporate the avocado. The texture that I aim for is one where there are still a few small chunks of avocado.
Taste and season with salt and pepper. Add more lime juice if needed. Drizzle with a little olive oil.
I like to serve it at room temperature as I feel this gives the best flavour!

Make guacamole when avocados are in season as they are ripe, delicious and affordable.
