Festive Gingerbread Man

This is our favourite Gingerbread Man recipe- it’s easy, uses simple ingredients, and it works!

It’s a great one to do with kids too, they will have a ball decorating.

There are many recipes for the icing but ours is simply icing sugar mixed with a little lemon juice (until we get the consistency of glue). The decorations are shop-brought using natural colours. Enjoy!


INGREDIENTS: 

225g plain flour

2 tsp bicarb soda

1 tsp ground ginger

1/2 tsp ground cinnamon

Pinch of ground nutmeg

50g butter

45g soft brown sugar

70g golden syrup

1 egg yolk

METHOD:

Sift dry ingredients into a bowl.

Melt butter, sugar and syrup in a small saucepan over medium heat. Pour into the dry mix and add the yolk. Combine and form into a dough ball then cover and rest in the fridge for 20 minutes.

Preheat the oven to 170 degrees.

Roll out the dough between 2 sheets of baking paper. This helps it to hold its shape. Cut your shapes using cookie cutters and place on lined baking trays.

Bake for around 10 minutes until golden and then allow to cool.

Decorate with royal icing!
