- 1 cup cashews
- 4-5 figs
- 50g (2 scoops) plant protein powder
- 1 tbs coconut oil
- 1 tbs almond or peanut butter
- 1 tsp vanilla bean powder
- 1 tbs honey
- 1 tbs chia seeds
- 1 tbs turmeric
- Chia seeds and shredded coconut for rolling
Put all of the ingredients in a thermomix or food processor and blitz. If it seems too oily, add a bit more of the “dry” ingredient such as protein. If it’s too dry, then add a little more of a “wet” ingredient like coconut oil.
Place the mixture in the fridge for about 30 minutes to cool it down and make rolling easier.
Put the chia seeds and shredded coconut mixture on a clean chopping board or bench top and roll the balls in the mixture. Refrigerate and enjoy!
